Tofu stir-fry with broccoli, mushrooms and aubergine – vegetarian meal at a Taiwanese place.

I always keep an eye out for simple nutritious recipes. I fell for this simple dish & it was certainly easy to cook. This is Parmesan polenta with mushrooms & caramelised onions – with poached egg & garlic. I used mashed potatoes to make it more firm.

A quick meal to prepare with filling you prefer – as there’s loads of tasty options – sandwiches 🥪

Small servings, savory, simple with good ingredients & vegetarian – then, it does not matter if it’s a hamburger, now & then.
